Anchovy season is coming to its end. We still have a few weeks to enjoy one of the treats of summer: marinated anchovies.

Boquerons are one of the most popular tapas in Barcelona evenings, along with an ice cold beer. They come in “tambores” (literally drums), but it’s very easy and a thousand times better to prepare at home.

Get the fresh anchovies at the market, clean them from heads and guts and leave them, butterflied in salt and vinegar for six hours. Dry them with a clean towel or paper and layer them with finely chopped garlic and pepper, completely covered in a good extra virgin olive oil.
